I made chocolate Merlot cupcakes for my mom’s birthday. The cake had a rich Merlot taste, and a reddish color. The frosting was light and fluffy and tasted like a very sweet Merlot, colored only by the wine!

Unfortunately, I don’t have the exact recipe that I used for the Chocolate Merlot Cupcakes, but a really easy way to make these would be to use your favorite chocolate cupcake recipe (I recommend the basic chocolate cupcakes from Vegan Cupcakes Take Over The World) and instead of the soymilk just substitute in Merlot. You can do this 1:1. That is how I made the cupcakes. For the frosting, you can make your favorite buttercream and do the same thing as for the cupcakes – substitute Merlot in for the soymilk, and you can taste it as you go (add soymilk if it gets too wine-flavored, or more wine instead of soymilk until you get the right frosting consistency).
