You want to freeze the pie so that it hardens – otherwise it is banana-mush, and difficult to slice neatly. You could choose to put the strawberries on right before serving it if you don’t want them to freeze, I have done that before.

One question: Why do you have to freeze it at all? Is there a reason apart from ahead-preparation? How are the strawberries holding up once frozen?
