Jessi, I’m so glad you liked this recipe! I love that you are trying out my recipes, and I can’t wait to hear how more experiments go. I’m also glad you brought some to your school – I’m totally pro-combining teaching and baking in whatever ways possible!

Ok, so first, I LOVE your blog here Tessa. It is so much fun and you distract me from the looming schoolwork we have:) I’ve never baked vegan-style before and it’s been pretty great so far. I’m not used to the maple syrup thing yet, mainly I have to buy some more…but anyways, my lemon poppyseed muffins just ‘popped’ out of the oven and they are even fluffier than I imagined. I didn’t have fresh lemons so I used some lemon juice from a container and lemon extract, so I probably could have added a bit more lemon, but they taste pretty great. I’ve been trying to take my baked goods out on the earlier side of the time estimate so they are especially light and that worked too. YUMMMMMMY!
