I’m so glad you made them (and liked them!). I bet the vanilla went with the raspberry flavor really well. For these cupcakes, I used the Spectrum brand of gel food coloring (in Burgundy). And as I recall, I didn’t chill my frosting at all – I just whipped it up, and piped it on immediately. But sometimes I do have to chill it depending on the thickness/consistency of the frosting…You just have to feel that one out as it comes, depends on the temperature of the Earth Balance when you start and the temperature of the room, etc.

Made them myself without the addition of almond meal so it was just a plain vanilla with a hint of almond cupcake. My frosting was also in no way as gorgeously pink as yours. What food colouring do you use? Do you thoroughly chill it before piping?
