<p style="text-align:center;">I <em>love</em> banana bread. Any kind &#8211; you can make it &#8220;healthier&#8221; or not, I always enjoy a hearty slice of sweet banana bread. <a href="http://thatsonetoughcookie.com/2010/03/15/banana-bread-two-variations/">Chocolate chips, nuts, applesauce</a>, carob, lots of spices, <a href="http://thatsonetoughcookie.com/2010/02/14/sweeteart-healthy-banana-blueberry-spelt-muffins/">berries mixed in</a>, you name it, I&#8217;ll eat it! This week, my brother got a hold of <em>a ton</em> of bananas (literally) and he made the most delicious banana bread ever. He gave me some bananas, I asked for the recipe, and I was shocked to find out that it was incredibly simple. Too simple, it seemed. But delicious. So, I made it exactly as he instructed, except I made two batches &#8211; one in a loaf pan and one batch into muffins. They were scrumptious both ways. Consider this recipe tested and perfected and so simple and quick to whip up, you will want to make it all the time. Except somehow you&#8217;ll have to have <em>so many bananas you turn yellow.</em> I think I have eaten enough, except now I want more, but magically we have eaten all the bananas he conjured up! <p style="text-align:center;"><span style="text-decoration:underline;"><strong>Banana Bread Ingredients:</strong></span><br />
4 ripe bananas<br />
3/4 cup brown sugar<br />
1/2 cup room-temperature margarine (I used Soy-Free Earth Balance)<br />
2 cups white flour<br />
2 tsp. baking powder<br />
1/4 tsp. salt<br />
sprinkle of dried coconut or sliced almonds, for topping</p>
<p>Preheat your oven to 350º F.</p>
<p>Mash bananas in a bowl using a potato masher or fork. You want to create as few lumps as possible. Beat in the sugar and margarine, till you have a smooth consistency. In a separate bowl, combine the flour, baking powder, and salt. Mix into the wet ingredients.</p>
<p>Pour into a greased loaf pan, or lined muffin tins. Sprinkle dried coconut, sliced almonds, or a pinch of sugar over batter to give a crunchy topping.</p>
<p>Bake muffins for 25-30 minutes.<br />
Bake loaf for 60-70 minutes.<br />
*Stick a toothpick into the center and it should come out nearly clean (a few crumbs are okay because it is best a bit moist).</p>

<p style="text-align:center;">I haven&#8217;t updated my blog in <em>forever</em>. I&#8217;m so sorry dear readers! Teaching has consumed so much of my time/life/energy/thoughts/dreams/being. When I <em>do</em> leave school, I may still have inspiration for baking but I have few daylight hours to take pictures and sometimes I just can&#8217;t bare to be on the computer any longer than I have to, as I crave adult contact and outside adventures! Over winter vacation though, I have had ample time to relax and recuperate, and be outside to my heart&#8217;s content. I have baked up a storm, although it wouldn&#8217;t seem like it from the small number of pictures I&#8217;ve taken. I did capture these delicious Orange Pumpkin Gingerbread Loaves, and I&#8217;m happy to share them with you. My lovely housemate gave me these mini loaf pans for the holidays, but the recipe is versatile and you can bake the batter into a larger loaf pan or a cake pan if you want. The orange juice gives a nice spicy flavor, and really highlights the ginger.</p>
<p style="text-align:center;">Bake these delicious treats to ring in a sweet new year! Have a happy holiday, everyone!</p>
<p style="text-align:center;"><span style="text-decoration:underline;"><strong>Gingerbread Ingredients and Recipe:</strong></span></p>
<p style="text-align:center;">1/2 cup canned pumpkin<br />
1 cup dark molasses<br />
1 cup orange juice<br />
2 1/2 cups whole wheat flour (you can use plain white flour, or do as I did: Easily make it gluten-free by using Bob&#8217;s Red Mill brand Gluten-Free Baking Mix)<br />
1 tsp. baking soda<br />
1/2 tsp. baking powder<br />
1 tsp. ground cinnamon<br />
1/4 tsp. ground nutmeg<br />
1/4 tsp. ground cloves<br />
2 tsp. powdered ginger<br />
1/2 tsp. salt<br />
1/4 cup finely chopped candied ginger (optional)<br />
1 Tbsp. orange zest (optional)</p>
<p style="text-align:center;">Preheat oven to 350ºF.</p>
<p style="text-align:center;">Mix pumpkin and molasses. Add orange juice.<br />
Sift together the dry ingredients and combine everything together.</p>
<p style="text-align:center;">Pour into a non-stick 8&#215;8 inch baking pan, or a loaf pan.  Bake 60 minutes. Bake the mini loaves for only about 18 minutes. If you stick a knife into the middle, it should come out nearly clean but not quite &#8211; you want it to be a little sticky.</p>

<p style="text-align:center;">Spring is here! It makes me simultaneously incredibly joyful and a little bit sad. It makes it really difficult to study, teach, and sit in class while it is warm and sunny outside&#8230;So I plan on making this post quite short in my effort to stay on the computer and inside as little as possible when I don&#8217;t have to.</p>
<p style="text-align:center;">Last week, we had gorgeous weather, and this week it&#8217;s looking and feeling beautiful again. However, last Friday was colder, grayer, and rainier, and of course this was the morning that I had off to play. My friend Zoe had fortuitously given me some ripe bananas the evening before, and so, instead of playing, I baked this spicy, moist, fragrant, and ultimately overall <em>delicious</em> Banana Bread. I made two variations; one with chocolate chips, and one without. Both loaves had pecans mixed in. Feel free to throw in whatever other add-ins you prefer. You can also use all agave or all maple syrup instead of the combination I used; just think about what flavors you want to bring out. I brought half a loaf of each variation to my afternoon class, with the intention of slicing and freezing the rest to keep for a future treat. Instead, I (and friends) ate it all within two days! Since there is no refined sugar (except in the chocolate chips) and no oil, it was a delightfully healthy study-break snack. I wish I could keep enjoying it, but alas, it is all gone. Anyone have bruised bananas that they want to gift to me so I can bake more?</p>

<p style="text-align:center;"><span style="text-decoration:underline;"><strong>Banana Bread Ingredients (recipe for one loaf):</strong></span></p>
<p style="text-align:center;">3 ripe bananas<br />
1/2 cup unsweetened applesauce<br />
1/3 cup agave<br />
1/3 cup maple syrup<br />
1 tsp. vanilla<br />
2 cups flour<br />
1 tsp. baking powder<br />
1/2 tsp. baking soda<br />
1 tsp. ground cinnamon<br />
1/8 tsp. ground cloves<br />
1/8 tsp. ground nutmeg<br />
3/4 cup chopped pecans + some for topping<br />
3/4 cup chocolate chips</p>
<p style="text-align:left;">Preheat your oven to preheated 350°F. Grease and flour a loaf pan.</p>
<p style="text-align:left;">In a medium sized bowl, mash bananas with Agave nectar, maple syrup, applesauce and vanilla until combined and creamy.</p>
<p>In a large bowl, sift together flour, baking soda, baking powder, cinnamon, cloves, and nutmeg. Add the wet to dry. Sprinkle in nuts and/or chocolate chips, and stir batter until just mixed.</p>
<p>Pour batter into loaf pan and bake for one hour.</p>

I know it&#8217;s a Hallmark Holiday, but I always love to celebrate it with lots of pink and hearts. All the <a href="http://bittersweetblog.wordpress.com/2010/02/13/love-is-in-the-air/" target="_blank">love</a> <a href="http://hellyeahitsvegan.com/?p=1743" target="_blank">floating</a> around just makes me smile <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' /> </p>
<p style="text-align:center;">Right now, I&#8217;m student teaching in a third grade class, and the students were so thrilled about the holiday &#8211; their excitement was contageous! My Cooperating Teacher has really set up a lovely community in the classroom, where the students feel comfortable with each other and with her; the Principal even commented on Friday that the class is just like a family, where there is trust and love and safety &#8211; and where the students are so close that they want to celebrate holidays exorbitantly together! These eight and nine year olds didn&#8217;t just bring in store-bought cards for their friends for Valentine&#8217;s Day, in fact, many of them brought goody bags filled with candy and chocolate and sweet notes for every single student in the whole class! One of our tables was literally covered, piled high with pink boxes of chocolate and red-wrapped chocolate roses, and one student even gave me a foot-long Valentine&#8217;s pen! It&#8217;s pretty incredible and I plan on treasuring it for a long time. It was hard to get any academic work done on such a celebratory day!</p>
<p style="text-align:center;">My students inspired me and I stayed up way too late on Thursday night making them all collaged cards and I had so much fun that I ended up making cards for all my friends&#8230;And then on Friday evening I had a crafts night with my girlfriends and made more V-day cards&#8230;And Saturday I spent the evening baking these delicious Banana Blueberry Muffins with my friend Talia and of course I had to put them in the festive paper liners that my mom bought me as a surprise! Aren&#8217;t they cute? Thanks, Mom!</p>
<p style="text-align:center;">Talia and I are not eating sugar, and she&#8217;s currently not eating wheat, so we did a lot of experimenting and adapting, and came up with this muffin recipe using spelt flour and date sugar. We were really into how delicious the batter was, and then how tasty the muffins were after they were baked, but we were a little concerned that they might not pass the test for &#8220;normal people&#8221; who eat white flour and white sugar all the time. We asked some friends to taste them, and they said they were good! So, this recipe is a great &#8220;heart healthy&#8221; (for Valentine&#8217;s Day as well as your real beating human heart) breakfast muffin, and with all the healthy additions it is certainly a great snack and was approved by all! However, if you don&#8217;t have those specialized ingredients on hand, and don&#8217;t have the same dietary concerns, then you can easily use white sugar instead of date sugar, and use white (or whole wheat) flour instead of the spelt. You could even make this recipe into a quick-bread, which would be delicious, and you can add in nuts or chocolate chips if you want!</p>

<p style="text-align:center;"><strong><span style="text-decoration:underline;">Banana Blueberry Spelt Muffin Ingredients:</span></strong><br />
<em>Makes 12 regular sized muffins, or 24 mini-muffins</em></p>
<p style="text-align:center;">2 cups whole spelt flour<br />
1 1/2 tsp. baking soda<br />
1/2 tsp. baking powder<br />
1/2 tsp. salt<br />
1 cup date sugar<br />
1/3 cup canola oil<br />
2 ripe bananas, mashed<br />
2 Tblsp. ground flax seed<br />
3/4 cup water<br />
1 cup unsweetened almond milk (or any non-dairy milk)<br />
1 tsp. vanilla extract<br />
1 cup fresh or frozen blueberries</p>
<p style="text-align:left;">Preheat the oven to 350 degrees F.<br />
Lightly grease your muffin tins, or line with paper liners.<br />
In a medium-sized bowl, mix the flour, baking soda, baking powder, and salt together.<br />
In a large bowl, beat the date sugar and oil together, then add the mashed bananas. Stir in the flax. Add the water, non-dairy milk, and vanilla, and mix thoroughly.<br />
Add the flour mixture and stir until all ingredients are just combined.<br />
Gently fold in your blueberries last.<br />
Fill each muffin tin 3/4 full with batter. Bake regular sized muffins for 20-25 minutes, and mini-muffins only about 15 minutes. You&#8217;ll know they&#8217;re done when they begin to brown on top and a toothpick inserted into the center comes out clean.</p>

<p style="text-align:center;">I don&#8217;t usually use baking mixes, but I had this one on hand and wanted to make a last-minute treat, so I whipped it out and set out to make it. It turned out moist, crumbly, and had a perfectly crispy crust because I baked it in a cast-iron skillet. The mix I used was from <a href="http://www.thecravingsplace.com/products.htm" target="_blank">The Cravings Place</a>, and it was gluten-free, vegan, and sugar-free (and super fast and easy!). The instructions suggested adding sugar, honey, or maple syrup if you wanted a sweeter bread&#8230;I had an inner debate about this, and ended up adding only about 1/4 cup of maple syrup. Lightly sweetened this way, the naturally sweet cornmeal flavor really shone through the bread and made for a wonderful appetizer. I made a Miso-Tahini Spread to go on top, using a recipe from the <a href="http://www.angelicakitchen.com/" target="_blank">Angelica&#8217;s Kitchen Cookbook</a>, which made the cornbread a little more savory. Good vegan and from-scratch cornbread recipes that I have tried before have been from the same Angelica&#8217;s Kitchen Cookbook, as well as <a href="http://www.amazon.com/Modern-Vegetarian-Kitchen-Peter-Berley/dp/0060392959" target="_blank">Peter Berley&#8217;s</a> cornbread recipe (these recipes are very similar, as Berley developed many of the Angelica&#8217;s recipes). While neither of these recipes are gluten-free, they could be easily adapted to be by substituting rice flour and xanthan gum instead of the wheat flour.</p>

<p style="text-align:center;">Miso Tahini Spread Ingredients:<br />
Yield: 2 cups<br />
1/3 cup mellow barley miso (I used a brown rice miso to make this gluten-free)<br />
1/2 cup water<br />
1 1/3 cups tahini</p>
<p style="text-align:center;">Combine the miso with the water in a food processor. Puree until creamy.<br />
Add the tahini, and process until smooth.<br />
Spread liberally on top of your cornbread, crackers, or anything else you might want a savory topping on.</p>

<p style="text-align:center;">I got the idea for this bread from Dorie Greenspan&#8217;s fan site &#8220;<a href="http://tuesdayswithdorie.wordpress.com/" target="_blank">Tuesdays With Dorie</a>&#8221; where blogging fans choose a specific recipe of Dorie&#8217;s to make each week and then they all bake the same thing and post about it. So it&#8217;s kind of like baking together, from all over the world! One such recipe and post was for Dorie&#8217;s <a href="http://bakingwiththeboys.wordpress.com/2009/05/19/twd-my-fresh-mango-bread-well-my-pick-anyway/" target="_blank">Fresh Mango Bread</a>. It looked moist and crumbly and delicious. So I had to veganize it and try it out! My version was certainly moist and crumbly and delicious, but perhaps a bit too moist and crumbly! Next time I will try to cut down on the wet ingredients a bit and turn the oven temperature lower (and increase the baking time) so that the inside cooks more. The inside was moist and pudding-like, especially with the chunks of gooey mango and chewy raisins. The inside firmed up a bit by the next morning, and it was actually quite a nice soft texture. I liked that the outside had a bit of crunch to it. And the taste! Yum. All the ginger and cinnamon spices were delightful, and the lime juice adds a lovely zing. It&#8217;s sweet but not too-sweet, was a great dessert cake (with a scoop of vanilla ice cream it would be divine!), and also was a great breakfast cake. Come on, admit it, you like to eat cake for breakfast, and this one is actually mildly healthy (just forget all the white flour, sugar, oil, etc. But it <em>does</em> have fruit in it! So that counts for something, I&#8217;d say).</p>
<p style="text-align:center;">I&#8217;ve written out my adapted recipe below; You can choose to lower the oven temperature or the amount of liquid if you want to.</p>
<p style="text-align:center;">Ingredients:<br />
3/4 cup plain soy yogurt<br />
3/4 canola oil<br />
2.5 cups all purpose flour<br />
1 cup sugar<br />
1 tsp. baking powder<br />
1 tsp. baking soda<br />
1 tsp. ground ginger<br />
1 tsp. ground cinnamon<br />
1/4 tsp. salt<br />
1/2 cup (packed) brown sugar<br />
2 cups diced fresh mango<br />
3/4 cup moist, plump golden raisins<br />
Grated zest of 1/2 lime<br />
Juice of 1/2 lime<br />
Topping:<br />
1/4 cup of dried shredded coconut<br />
1/8 cup chopped cashews</p>
<p style="text-align:center;">Center a rack in the oven and preheat the oven to 350 degrees F.  Grease an 8.5 x 4.5 inch loaf pan, dust the inside with flour and tap out the excess. Put the pan on an insulated baking sheet or on two regular baking sheets stacked one on top of the other. (This extra insulation will keep the bottom of the bread from overbaking).</p>
<p style="text-align:center;">Whisk the soy yogurt and oil together. Add the sugars and continue whisking.</p>
<p style="text-align:center;">In a large bowl, whisk together the flour, baking powder, baking soda, spices and salt. Pour the wet ingredients over the dry, switch to a sturdy rubber spatula or wooden spoon and mix until blended — the batter will be very thick (really more like a dough than a batter) and not easily mixed, but persevere, it will soon come together. Stir in the mango, raisins, zest, and lime juice. Scrape the batter into the pan and smooth the top with a rubber spatula. Sprinkle the coconut and chopped cashews on top.</p>
<p style="text-align:center;">Bake the bread for 1.5 hours, or until it is golden brown and a thin knife inserted into the center comes out clean. (If the bread looks as if it’s getting too brown as it bakes, cover it loosely with a foil tent &#8211; shiny side of foil facing up). I did this at 45 minutes. Transfer the pan to a rack and cool for 5 minutes before running a knife around the sides of the pan and unmolding. Invert and cool to room temperature right side up on the rack. Let cool completely before slicing.</p>

They eat it on salads as a dressing, and there is a pound cake that is made with it as well. Pumpkin Seed Oil has an intense and exquisite nutty taste, and is rich in essential fatty acids, so it&#8217;s very good for you, as well as producing a great green color to anything it touches!</p>
<p style="text-align:center;">Tara was so excited about the oil that her mom very generously gave us some, and today we baked the cake! We had to pretty radically adjust the recipe to make it vegan, because it used a lot of butter and eggs. But we came up with something good and it worked very well. Our cake was a deep green and a good heavy consistency. As it wasn&#8217;t too sweet, it would be great as a brunch item (with green eggs and ham?), but we got a little creative and added a few different sauces and icings to sweeten it up. You can see from the photo above, that we made a cashew icing that I&#8217;ve used before, from <a href="http://bittersweetblog.wordpress.com/2009/02/18/citrus-sunshine/" target="_blank">Hannah Kaminsky&#8217;s blog</a>. This time I wanted it thicker, so I simply doubled the amount of cashews. As usual, it was delightfully creamy and rich. It was perfect paired with the cake!</p>
<p style="text-align:center;"><span id="more-783"></span>We also made a raspberry compote from scratch that had a bit of orange in it to compliment the light lemony citrus flavor in the cake, and drizzled that on quite liberally.</p>
<p style="text-align:center;">My favorite addition to the cake was the pumpkin seed marzipan that we made from a combination of ground raw pumpkin seeds, raw almonds, powdered sugar, almond extract, a bit of pumpkin seed oil, and water. The consistency was a bit gloppy, but it tasted great and had that great green color that the pumpkin seed oil has. It was fun to mold and make shapes with! We put all our sauces and marzipan and things together, and made a very elaborate cake, shown below. The dark green top layer and little balls surrounding the base of the cake that look like capers, are really marzipan!</p>

<p style="text-align:center;">Ingredients:<br />
1 3/4 cups all-purpose flour<br />
2 tsp. baking powder<br />
1/2 tsp. salt<br />
1 cup sugar<br />
4 large eggs worth of egg replacer<br />
2 tsp. lemon zest<br />
1 Tblsp. apple cider vinegar<br />
2 Tblsp. soy milk<br />
1/2 cup pumpkin seed oil<br />
1/4 cup canola oil<br />
2/3 cup toasted pumpkin seeds, ground after initial measuring</p>
<p style="text-align:center;">Preheat the oven to 325 degrees F. Fully grease a loaf pan, up to the top of each side.</p>
<p style="text-align:center;">Blend together the ground pumpkin seeds, flour, baking powder, and salt in a medium bowl to blend. Mix vinegar with soy milk in a small cup or bowl, and let sit until curdled. Using an electric mixer beat the sugar, egg replacer, and lemon zest in a large bowl until pale and fluffy. Beat in the vinegar and milk mixture. Gradually beat in the oils. Add the flour mixture and stir just until blended. Pour into the prepared pan. Bake until golden on top and a tester inserted into the center of the cake comes out clean, about 35-40 minutes. Transfer to a wire rack and cool completely. Remove the cake onto a platter. Serve with a sprinkling of powdered sugar on top, or with a sauce of your choice.</p>
