To quote my friend Claryn, these are the “Best Damn Chocolate Chip Cookies in the Universe” – I have to whole-heartedly agree. These cookies were fantastic! Chewy, delicious, definitely home-style, and very easy to whip up quickly! Claryn made these same cookies on her blog, and sent me the recipe. We used different egg replacers, so the density of the cookies turned out a little differently (mine stayed in a similar shape as to how I put them on the pan, while her’s spread out some), but I’m sure the taste was nearly the same. We both like our cookies under-baked so the the texture was perfectly soft and gooey for both of us. The recipe is adapted from Vegan Planet, and then I folded a small amount of chopped walnuts and pecans into the batter for some added crunch.
