Before I was born, while my mom was in the beginning stages of labor, she baked hundreds of cookies to keep herself occupied. Here I am, grown up, and still baking whenever I am stressed out or can’t sleep, and need some baking-therapy. I bake vegan cupcakes and cookies and whatever else strikes my fancy. My personal sense of activism comes from my love for children (I work in an elementary school and see daily how much care and commitment needs to go into helping our youth become strong, thoughtful, responsible people), and my love for being outside, being physically active, and eating healthy. Because of these commitments, I believe in repairing the world one vegan cupcake, cookie, tea party, or one long walk at a time.

I lived in a vegan cooperative house during college and learned the basics of cooking and baking delicious things without animal products; after three years, I was hooked on the lifestyle politically, ethically, and gastronomically, and have continued eating this way ever since. I love the challenge of baking, of not knowing what shape your batter will take in the oven or how the flavors will change; the constant experiment is exhilarating, and I can spend hours researching and perfecting a recipe.

I have not posted some of my recipes on this blog, just because I don’t always have the time to do it. But I do enjoy sharing, so if there is a particular recipe that you would like, please let me know and I will get it to you!

If you live in the Bay Area, I can also do special custom orders for any type of vegan baked good. I always bake using vegan ingredients, and can accomodate for specific allergens including soy, wheat or gluten, nuts, etc. Check out my blog entries for ideas of things I like to make (cupcakes, cakes, cookies, pies, bread, and even ice creams!), and I am always excited to try new ideas and flavors so don’t hesitate to send specific requests that aren’t posted on this blog. You can contact me for order by commenting on this blog, or email me at thatsonetoughcookie@gmail.com

Hi JBaggins. I would totally share the recipe with you–however, I was traveling when I made the cupcakes and left the recipe with my friend in Holland! I’ve written to her asking for the recipe, so when I receive it I will update the post and put it up. Thanks for reading my blog! Sorry I can’t be more prompt about getting you the recipe.
